Aufgrund ihrer amphiphilen Struktur k\u00f6nnen sie in Emulsionen, aber auch zur Herstellung von Liposomen eingesetzt werden. Lecithin bzw. die darin enthaltenen Phosphatidylcholin-Fraktionen haben in kosmetischen Formulierungen zwei besondere Funktionen. Zum einen bilden die hydrierten und damit oxidationsstabileren Varianten lamellare Strukturen, so genannte Dermo-Membran-Strukturen, die sich als nat\u00fcrliche O\/W- oder W\/O-Emulgatoren eignen. Zum anderen sorgen die lamellaren Strukturen f\u00fcr pflegende sensorische Eigenschaften und sch\u00fctzen die Hautbarriere auf nat\u00fcrliche Weise.
